Are dinosaur "bones" stone?

Many dinosaur bones in museums are fossils altered by minerals: minerals can fill the bone’s pores (permineralization) and partly or fully replace its material. But fossilization varies, and some fossils retain part of the original bone material. So “they are rocks, not bones” is a useful simplification, not a universal description.

Minerals can fill pores or replace bone tissue.
