Water Boils Sooner at High Altitude

At high elevation, lower atmospheric pressure makes water boil at a lower temperature. On the Tibetan Plateau, at roughly 4,000–5,000 m, that can be about 87–85 °C, depending on elevation and local pressure. Some foods therefore take longer to cook; a sealed pressure cooker raises the pressure and boiling temperature. The image is a synthetic AI illustration.
